Name both sides properly
“Cheese and wine” helps nobody. “Aged comté and dry oloroso” does. Be as specific as you can be without inventing detail you don't have.

The reason is the post
Anyone can list two things. Explain what actually happens on the palate — acidity cutting fat, shared aromatic compounds, salt suppressing bitterness, temperature contrast.

Only post pairings you have actually had
This is an archive of real experience, not a list of plausible guesses. If you haven't tasted it, don't file it.

Vote for pairings, not for people
A vote means you'd tell a friend to try it. One vote per pairing, and you can take it back at any time.
